Apricot-Banana No Bake cookie recipe

Apricot-Banana No Bake cookie recipe

The Apricot-Banana no bake cookie recipe produces delicious treats loaded with fiber and beta-carotene.

So, how to make this no bake cookie recipe:

Ingredients:
  • Honey 1 Tbsp
  • Water 2/3 cup
  • Fresh lemon juice 2 Tbsps
  • 2¼ cups coarsely chopped Bananas
  • Dried apricots, coarsely chopped 2¼ cups
  • 1/3 cup butter cut into small cubes
  • 1/2 cup Light brown sugar
  • 1¼ cups Corn flakes

Directions:

  1. Spray an 8-inch baking pan with non-stick spray and set aside
  2. Take the lemon juice, honey, water, dried apricots and bananas into a saucepan and bring to a boil over medium heat
  3. Simmer over low heat until the fruits are softened (about 25 – 30 minutes)
  4. Remove from heat, set aside to cool
  5. In another saucepan, melt butter with brown sugar over low heat until the sugar dissolves completely
  6. Add the corn flakes to the melted butter saucepan
  7. Once the corn flakes and butter are mixed, firmly press half of this corn flake mixture into the prepared pan, smooth it and even it out
  8. Spoon the cooled apricot-banana mixture over it, and cover with the remaining of the corn flake mixture
  9. Cool completely before cutting into shapes

This no bake cookie recipe yields about 20 cookies (2″ x 2″ each)

Almond Bark No Bake Cookie recipe

The Almond Bark No Bake Cookie recipe is a great No Bake Cookie recipe for Almond Bark lovers.

Ingredients:
  • 2 lbs. almond bark
  • 1 cup crunchy Peanut Butter
  • 2 cups dry roasted peanuts
  • 2 cups mini marshmallows
  • 2 cups rice Krispies
Directions:
  1. Melt almond bark in double broiler or a microwave
  2. Blend in the crunchy peanut butter
  3. Add the roasted peanuts, marshmallows and the rice Krispies and mix gently
  4. Drop the mixture onto wax paper lined cookie sheets by teaspoonfuls
  5. Refrigerate until set, keep refrigerated
