Bacon and Egg Fried Rice Recipe
posted in Fried Rice Recipes |
Bacon and egg are always a good combination, as you can see on this great fried rice recipe.
Ingredients:
- 3 cups cooked rice
- 5 slices bacons - chopped into small pieces
- 3 large eggs
- 3 green onions - chopped into 1/4 inch pieces
- 3 Tablespoons soy sauce
- 3 Tablespoons vegetable oil or canola oil or peanut oil
- dash pepper
- salt to taste
Directions:
- Fry pieces of bacon in a large skillet until crisp, drain and set aside
- Set bacon on a plate and clean the skillet for reuse
- Beat eggs in cup and scramble in a little oil in the skillet
- Set scrambled eggs on a plate and clean the skillet for reuse
- Heat the remaining oil in pan and add cooked rice
- Toss the rice to coat and add some soy sauce
- Add eggs, bacon pieces, pepper and salt (remember to go easy on the salt as the soy sauce is already salted
- Stir and for a couple minutes, add the onions and stir until done

I like all of the ingredients, but after trying it I changed a couple of things. Actually, I changed the original recipe the first time by reducing the eggs from 3 to one.
I cooked the bacon as directed, but retained the fat. I then coated the rice, added the soy sauce, then added the eggs and the bacon.
I also reduced the amount of each item, from 3 to 1, single eater, and the bacon to 2 or 3 depending on the fat content of the slices. The green onions were pure inspiration, thanks.
