The Pineapple and Scallop Fried Rice Recipe is a refreshing and tasty fried rice recipe.
You are welcome to try it, to try my other fried rice recipes and you’re more than welcome to leave a comment
Ingredients
- 1.5 cups of long-grain rice
- 1 tablespoon vegetable oil
- 1 tablespoon minced peeled fresh ginger
- 2 minced garlic cloves
- 4 ounces bay scallops
- 1 cup coarsely chopped pineapple
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon salt
- 1/4 to 1/2 tsp pepper
- 1/2 tablespoon minced fresh cilantro
Directions
- Boil a medium pot of salted water
- Stir in the rice and boil for 10 minutes (until done)
- Drain the rice and set aside to cool
- Heat oil in a large nonstick skillet over med-high heat
- Add the ginger and garlic; stir-fry until lightly browned (about 2 minutes)
- Add the scallops and stir-fry until scallops are done (about 3 minutes)
- Add rice, pineapple, juice, salt and pepper; stir-fry until thoroughly heated
- Sprinkle with cilantro and serve

Fried rice with ham is a classic fried rice recipe.
Ingredients
- 1.5 cups of long-grain rice
- Vegetable oil
- 2 lightly beaten eggs
- Diced ham
- Dry sherry
- Soy sauce
- Sliced peas
- Yellow or Spanish onions
- Salt
- Pepper
Directions
- Boil a medium pot of salted water
- Stir in the rice and boil for 10 minutes (until done)
- Drain the rice and set aside to cool
- Heat a little oil in your wok, pour eggs in and tilt the wok to spread evenly
- Once the eggs are set up, lightly scramble them so you have medium/small pieces
- Remove the eggs to a bowl
- Heat the wok adding more oil
- Add the onions and stir fry until they start to darken
- Stir in the rice
- Drizzle a little dry sherry down the sides of the wok
- Drizzle in a little soy sauce
- Stir in all of the other ingredients and season to taste with salt and pepper
- Continue to stir and cook until heated through

The Egg fried rice recipe is a basic recipe that reminds us why the fried rice is so popular.

Ingredients
- 1.5 cups of long-grain rice
- 2 large, lightly beaten eggs
- 2tsp sesame oil
- 1 tsp salt
- 30ml (2 tbsp) groundnut oil
- ¼tsp freshly ground black pepper
- 2 tbsp finely chopped spring onions
Directions
- Boil a medium pot of salted water
- Stir in the rice and boil for 10 minutes (until done)
- Drain the rice and set aside to cool
- Put the eggs, sesame oil and half the salt in a small bowl, mix with a fork and set aside
- Heat a wok over a high heat
- Add groundnut oil and the rice, stir-fry for 3 minutes, or until it is thoroughly heated through
- Drizzle in the egg and oil mixture and continue to stir-fry for 2-3 minutes or until the eggs have set and the mixture is dry
- Add the remaining salt and the pepper and stir-fry for 2 minutes longer
- Toss in the spring onions, stir several times and turn to a platter

After all the beef and sea food fried rice recipes, here’s a fried rice recipe which is all vegetarian
INGREDIENTS:
- 1 1/2 cups of long-grain rice
- 1 cup frozen mixed peas and carrots
- 3 tablespoons peanut oil
- 2 lightly beaten eggs
- 1 minced garlic cloves
- 2 tablespoons chicken broth
- 2 tablespoons soy sauce
- 1 sliced green onion
DIRECTIONS:
- Boil a medium pot of salted water
- Stir in the rice and boil for 10 minutes (until done)
- Drain the rice and set aside to cool
- Microwave the carrots and peas for about 5 minutes (until tender); Drain and set aside
- Heat 2 tablespoons oil in a large frying pan over high heat
- Add garlic and stir for about 30 seconds
- Add the cooked peas and carrots
- Remove from heat and move to a mixture to a bowl
- Heat the remaining oil in the pan over high heat and add the rice to the pan; Stir fry for 3 to 4 minutes
- Make a well in center of rice and pour in the beaten eggs
- Stir the eggs until they are scrambled; Stir-fry the eggs into the rice until thoroughly blended
- Add soy sauce and chicken broth and stir fry for 3 minutes
- Add the vegetable mixture and scallions
