The recipe is easy to follow and great to eat

Ingredients

  • 1 1/2 cups of long-grain rice
  • 3 tablespoon cooking oil
  • 1 1/2 pound thin sliced mushrooms
  • 1/4 teaspoon dried red-pepper flakes
  • 1 tablespoon grated fresh ginger
  • 6 scallions including green tops, sliced thin
  • 1/2 teaspoon salt
  • 1/4 cup soy sauce
  • 1/2 cup peas
  • 1 teaspoon sesame oil
Directions
  1. Boil a medium pot of salted water
  2. Stir in the rice and boil for 10 minutes (until done)
  3. Drain the rice and set aside to cool
  4. While the rice is made, heat 1 tablespoon of the cooking oil in a large nonstick frying pan or wok, over moderately high heat
  5. Add half the mushrooms and cook for about 5 minutes, stirring frequently, until the mushrooms are tender and golden, move the mushrooms to a plate
  6. Repeat the mushrooms cooking with the other half of the mushrooms and another tablespoon of the cooking oil. Add these mushrooms to the plate
  7. In the same frying pan, heat the remaining tablespoon of cooking oil over moderate heat
  8. Add the red-pepper flakes, ginger, and scallions and cook, stirring, for about 30 seconds until fragrant
  9. Increase the heat to moderately high and add the rice, salt, and soy sauce
  10. Cook for 2 minutes, stirring, and add the peas and mushrooms
  11. Cook, stirring, for another 1 to 2 minutes until everything’s warm
  12. Remove the pan from the heat and stir in the sesame oil

Happy Cooking :-)
