Ingredients:
  • 3/4 cups butter
  • 1 tablespoon butter
  • 1 tablespoon good quality cocoa powder
  • 1/2 cup granulated sugar
  • 6 tablespoons freshly ground espresso beans (finely ground)
  • 1 beaten egg
  • 1 tablespoon vanilla extract
  • 2 cups graham cracker crumbs
  • 1 cup chopped macadamia nuts
  • 1 cup sweet shredded coconut
  • 2 cups confectioners’ sugar
  • 2 tablespoons freshly brewed hot espresso coffee
  • 3 ounces semisweet or bittersweet chocolate squares
Directions:

Coat an 8-inch square pan with butter and set aside.

First layer:

  1. Melt 1/2 cup butter in a 2-quart pan
  2. Remove from the heat and stir in the cocoa, and 4 tablespoons of ground coffee; mix well
  3. Add the beaten egg and vanilla extract; mix until completely blended
  4. Gradually stir in the graham cracker crumbs and mix well (you’ll get a thick mixture)
  5. Add the nuts and coconut to the mixture and mix to combine
  6. Press the mixture into the prepared pan and set in the refrigerator to cool

Middle layer:

  1. Beat 1/4 cup of butter until soft, then gradually add the sugar and beat until creamy smooth
  2. Stir in a little of the espresso coffee, only to make the mix smooth and easy to spread
  3. Remove the pan from the refrigerator and spread over the first layer
  4. Return to refrigerator to cool

Top layer:

  1. Melt the chocolate, 1 tablespoon of butter and the remainder of the ground coffee in a double boiler, mixing to combine
  2. Spread the mixture evenly over the middle layer
  3. Return to refrigerator to cool for 1 hour until the top layer sets
  4. Cut into small squares that will give you 36 pieces
