Apricot Glazed Pork Chops Recipe

Apricot Glazed Pork Chops Recipe

Ingredients:

  • 4 pork rib or loin chops, 1/2 inch thick
  • 1 tsp salt
  • 1 TBS oil
  • 1.3 cups (1 lb can) apricot halves (drain and reserve the liquid)
  • Reserved apricot liquid, add water to make 1.5 cups
  • 2 TBS cornstrach
  • 2 tsp lemon juice
  • 2 TBS slivered almonds

Preparations:

  • Sprinkle chops with salt
  • Brown the pork chops in oil on both sides in a fry pan
  • Add 1/2 cup of the apricot liquid
  • Cover the pan, reduce the heat and simmer for ten minutes
  • Combine the cornstarch and the remaining 1 cup of apricot liquid and Add to the chops
  • Continue simmering, stirring frequently, until the liquid thickens
  • Add apricots and almonds, cover and continue to simmer for 10 minutes
