Rioja Pork Chops Recipe

Rioja Pork Chops Recipe

INGREDIENTS:

  • 2 tbsps olive oil

  • 4 loin pork chops about 1″ thick

  • 1 chopped medium onion

  • 1 minced clove garlic

  • 3 homemade pimientos cut in strips

  • 2 chopped tomatoes

  • Salt and pepper

PREPARATION:

  • Heat the oil in a large, shallow casserole and brown the chops quickly

  • Add the onion and garlic, and cook until the onion is wilted

  • Add the pimientos, tomato, salt and pepper to the pork chops

  • Cover and simmer for about 20 minutes until the chops are cooked through

Homemade pimientos:Place red bell peppers in a roasting pan and bake at 350 degrees Fahrenheit (175 degrees Celsius) for 30 minutes, turning occasionally until blackened on all sides

Peel off the skin and remove the seeds

A trick to easy peeling: put the red bell peppers in a closed paper bag for 10 minutes before peeling
