Shrimp Fried Rice Recipe

Ingredients:
- 2 tablespoons chicken broth
- 2 tablespoons rice wine
- 1 tablespoon soy sauce
- 1 teaspoon dark sesame oil
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 cups of long-grain rice
- 2 tablespoons vegetable oil
- 2 large, lightly beaten eggs
- 2 cups chopped green onions
- 1 tablespoon minced peeled fresh ginger
- 1 pound medium shrimp, cooked, peeled, and chopped
- 10-ounce package of frozen green peas
Directions:
- Boil a medium pot of salted water
- Stir in the rice and boil for 10 minutes (until done)
- Drain the rice and set aside to cool
- Mix the first 6 ingredients in a bowl and set aside
- Heat the vegetable oil in a large nonstick skillet over medium-high heat
- Add the eggs and stir-fry for about30 seconds or until soft-scrambled
- Add the onions and ginger; stir-fry for 1 minute
- Add the rice, shrimp, and peas; stir-fry for about 3 minutes or until thoroughly heated
- Add the broth mixture and toss gently to coat
